Wood Fired Pizza

Wood fired pizza is something truly delicious, I’m no expert, but I’ve been cooking it for many years, and have experimented with some great recipes, No Knead Pizza is a very easy way to get a batch of dough ready.

Jim Lahey of Sullivan St. Bakery in the US came up with the easiest way to make pizza dough, works great for bread as well. I love this recipe and technique for no knead pizzas. Teamed up with a little ‘nduja from Duchy Charcuterie this is definitely my favourite Pizza recipe.

800g Strong White bread flour (or use your own favourite) 16 g fine sea salt 600g water from tap 2g instant dried yeast Stir to bring together, but no need to knead. Use a little fine semolina on the work surface.

Ball after at least 14 hrs at room temperature. Leave covered for a couple of hours. Shape into pizzas, stretching gently. Top with passata, mozzarella and as much nduja as you like, cook at around 400c in a wood fired oven turning frequently, should take between 1 and 2 minutes.

I cooked mine in the Bushman Santorini wood fired oven.
